Gluten-Free Caramel Superfood Pretzel Bark

This gluten-free caramel superfood pretzel bark might be my new favorite recipe. It’s equal parts salty and sweet, making the perfect merge of flavors in your mouth.

This recipe started as a mistake. I was attempting to make 7-layer bars and realized I didn’t have half of the ingredients. Let’s just say I’ve never been happier to not have coconut flakes in my pantry.

Gluten-Free Caramel Superfood Pretzel Bark

This recipe turned out 10x better than I could have imagined. It tastes like the real deal without the processed sugar 🙂

Gluten-Free Caramel Pretzel Bark

Ingredients

  • 1/2 cup grass-fed butter
  • 1/2 cup coconut oil
  • 1/2 cup coconut sugar
  • 1/2 cup maple syrup
  • 1 tsp vanilla extract
  • 1 bag gluten-free pretzels

Instructions

  1. Preheat the oven to 400F.

  2. Line a baking pan with parchment paper and pour pretzels to cover the bottom. I like to break mine up a little bit before I add them, but you can also leave them as is.

  3. Melt butter and coconut oil over medium heat. Once melted, add the syrup and coconut sugar and stir for 3-4 minutes.

  4. Remove from heat and add the vanilla extract.

  5. Pour the caramel mixture over the pretzels and place in the oven for five minutes.

  6. Take the pan out and add chocolate on top. Cook for another 4 minutes, then spread the melted chocolate with a spatula.

  7. Place pan in the freezer for an hour or until hardened.

  8. Break up and enjoy!

One important part of this recipe is making sure to allow the bark to completely freeze before breaking it apart. As enticing as it smells, let the caramel pretzel bark for at least an hour!

You can use whatever form of chocolate you want to top it with, but I think dark chocolate is always the best with the salty contrast.

I used Lily’s chocolate because I was going to give the bark to some friends that stay away from sugar, but you can use any kind you like!

Christmas bark is a great gift to give to friends during the holiday season. When I was in high-school I used to make it along with a few different types of cookies and give them out to my friends. It was always a huge hit, and not something I had to break the bank for.
