Gluten-Free Peanut Butter Chocolate Chip Cookies

If someone ever asked me what I wanted as a last meal, I’d answer this. And hope they got confused with how long the name was and let me live. 

Ingredients

  • 1/2 cup almond flour
  • 3/4 cup oats (gluten-free)
  • 1 tsp baking soda
  • 1 cup chunky peanut butter
  • 1/4 cup honey
  • 1/4 cup maple syrup
  • 1 egg
  • 3/4 cup chocolate chips or chunks
  • sea salt (optional but recommended)

Instructions

  1. Preheat the oven to 350. 

  2. Add the almond flour, oats, and baking soda in one bowl. 

  3. Combine the peanut butter, honey, maple syrup, and egg in another bowl. 

  4. Add the dry mix to the wet mix. Then add in the chocolate chips. 

  5. Place batter on a baking tray, sprinkle sea salt on top, and place in the oven for 8-10 mins. 

  6. Enjoy!
