Peanut Butter Superfood Balls

When I was younger, my friend’s mom used to make peanut butter balls all the time. We had them for birthdays, holidays, and random happy days in-between.

I’m honestly surprised (at myself) that it took me this long to replicate them.

Instead of packing them full of confectionary sugar, I added honey, maple syrup, and some coconut flour to give them a similar taste and texture.

Peanut Butter Balls

If you’re into peanut butter, you’ll be into these. They’re creamy, crunchy, and delicious.

Peanut Butter Balls

Ingredients

  • 1 1/4 cup peanut butter
  • 1/4 cup honey
  • 2 tbsp natural maple syrup
  • 1/2 cup coconut flour
  • 1 tbsp ashwagandha from Bare Organics
  • 1 1/2 cup chocolate
  • 2 tbsp coconut sugar
  • pinch coarse sea salt

Instructions

  1. In a medium-sized bowl, mix the peanut butter, honey, maple syrup, coconut flour, ashwagandha, and salt. Roll the dough into balls and place in the freezer for about 20 mins. 

  2. While the balls are cooling, melt the chocolate and coconut oil over medium heat.

  3. Take the balls out of the freezer, and roll them in the melted chocolate.

  4. Sprinkle a little bit of sea salt on top, and place them back in the freezer. Let them cool for another 30-45 minutes.

  5. Enjoy!
