While we are discussing pumpkin I feel like I should admit something.

I don’t actually like pumpkin.

But you guys do, and all my friends do, so I will keep making and giving away these recipes!

Chocolate-Pumpkin Cookie Balls

Might sound like an odd combo, but you will stop saying that the second you try one!

Ingredients

  • 1/3 cup cashew butter
  • 3 tbsp coconut oil
  • 3-4 tbsp maple syrup
  • 3 tbsp pumpkin purée
  • 2 tbsp almond milk
  • 1 tsp vanilla
  • 1 1/2 cup almond flour
  • 1 cup coconut flour
  • 1 tsp baking soda
  • 1/2 cup mini chocolate chips

Chocolate Coating

  • 1 1/2 cups chocolate chips
  • 2 tbsp coconut oil

Instructions

  1. Add together wet ingredients in one bowl, dry in another. 

  2. Add the dry ingredients into the wet ones. 

  3. Fold in mini chocolate chips.

  4. Roll dough into balls and place in the freezer for an hour.

  5. After they freeze, melt 1 1/2 cup of chocolate chips and 2 tbsp of coconut oil over stove. 

  6. Dip the cookie dough balls in chocolate. 

  7. Place back in the freezer & enjoy whenever you like! ⠀⠀

It’s not that I hate pumpkin, it’s just not a flavor I’m particularly fond of. Unless it’s a pumpkin spice latte from Starbucks, then I detest it. The first time I tried one of their psl’s I actually thought I was going to have to spit it out.

I’m very strange, I know. And now I’m rambling and doing that thing bloggers do to try to reach a specific word count for SEO purposes. Just being honest LOL.

Still haven’t reached it, so I’ll tell you what I am doing this weekend! I am pretty excited for the weekend. I love Saturday’s and Sunday’s in DC and have missed them so much while I’ve been gone.

Tonight I am grabbing dinner with my boyfriend at a new spot we’ve been wanting to try, which is always nice. Tomorrow morning I’ll hit an early morning spin class, then grab a coffee with my boyfriend, go to the farmers market, and hopefully get some donuts.

Shockingly I haven’t had donuts in a month – not okay!

After the farmers market, we will probably just hang around Old Town and maybe go to Georgetown to shop/do returns. That’s all I have planned so far but so looking forward to it.
