Vegan Pasta With Lemon Cashew Sauce

Ingredients

  • 1 box pasta of choice
  • 1 cup water
  • 1 cup cashews
  • 1/2 lemon juice + zest
  • 2-3 tbsp olive oil
  • 2 tbsp ground black pepper
  • 2 tsp garlic powder
  • 2 tsp salt

Instructions

  1. Pour 1 cup of cashews into a bowl, and soak in boiling water for 20 mins.

  2. Cook your pasta according to how you like it! I use @eatbanza most of the time. Make sure to reserve two cups of pasta water when you strain.

  3. While the pasta is cooking, grab your blender or processor and add lemon juice, lemon zest, olive oil, black pepper, garlic powder, and salt.

  4. Drain your cashews and add those too.

  5. Lastly, add the 2 cups of pasta water and blend on high for 1 minute.

  6. Pour sauce over your pasta, and add pepper or salt for garnish, and enjoy!
