Preheat oven to 350 degrees.
Mix together the dry ingredients in one bowl (almond flour, cinnamon, cinnamon, nutmeg, baking soda, salt, coconut sugar)
Mix together wet ingredients in another bowl (ghee, coconut oil, syrup, eggs, vanilla) until mixture is smooth.
Add-in the dry ingredients to the wet ones.
Add-in the rolled oats, until consistent throughout the batter.
Lastly, fold in the apple pieces.
Roll into balls and place onto baking sheets. Bake for around 12 minutes on 350 degrees.
After removing, allow them to cool and then top them with optional yogurt mixture/nuts of choice.
Take ½ cup of yogurt -- I use plain [foragers brand] because it’s not made with dairy, but feel free to use whatever kind you prefer!
Add ½ tsp of nutmeg, 1 tsp of cinnamon, and 1 Tbsp of syrup to the yogurt.
Drizzle on-top of cookies.
