Cashew Butter Raspberry Jam Cookies

fresh and fruity - just the way summer cookies should be. 

Ingredients

Cashew Cookies

  • 1 cup almond flour
  • 1/2 cup coconut flour
  • 1 egg
  • 1/4 cup cashew buter
  • 2 tbsp maple syrup
  • 1 tsp vanilla
  • 1 tsp baking powder

Raspberry Jam Filling

  • 1 1/2 cup raspberries
  • 2 tbsp chia seeds
  • 1 tbsp maple syrup
  • 1 tbsp coconut oil

Instructions

  1. Preheat the oven to 350.

  2. Mix together all the cookie ingredients. 

  3. Place the dough in the fridge for 30 minutes.

  4. While it is cooling, put all the raspberry ingredients on the stove to simmer. 

  5. Once the cookie dough is done cooling, place in balls on a tray, then lightly flatten them with a spoon. 

  6. Add raspberry filling on top, and cook for 12-ish minutes. 

  7. Enjoy!
