Veggie Packed Breakfast Bowl

I'm already full and satisfied just thinking about it. 


  • 2 tbsp olive oil
  • 2 potatoes
  • 1 tomato
  • 2 cups cauliflower rice
  • handful spinach
  • handful kale
  • 4 eggs
  • 2 tsp garlic
  • diced onion


  1. Add the olive oil, potatos, tomatoes, onion, and garlic to a pan. Cook over medium, until crispy. 

  2. Heat the cauliflower rice. When done cooking add to the potato mix.

  3. Heat the kale and spinach on the stovetop over medium. When done cooking, add to potato mix. 

  4. Cook eggs separately, to top off the above mix with! 

  5. enjoy!
