If you’ve been around for a while then you know about my obsession with Beckon Ice Cream.
I found out about them just about a year ago and love their ice cream, the fact that its a female-owned brand, and that their flavors are insane. I love partnering with Beckon on recipes because not only are they my favorite ice-cream but they are dairy-free & made with real ingredients.
That said, if you make anything this week, make this double chocolate skillet. It’s delicious, decadent, and rich in chocolate, and not to mention it is gluten-free.
Like all of my recipes, it’s also easy to make. That way if you’re anything like me and my sister, you can whip it up at 10pm when random cravings strike.
Double Chocolate Skillet
Ingredients
- 1 1/2 cup almond flour
- 1/2 tsp baking soda
- 1 egg
- 3 tbsp 100% natural maple syrup
- 3 tbsp coconut oil
- 2 tbsp almond milk
- 1 tsp vanilla
- 1/2 cup chocolate chips
Chocolate Topping
- 2 tbsp pb2 powder or peanut butter
- 1 1/2 tbsp cocoa powder
- 1 1/2 tbsp water
Instructions

Preheat the oven to 350 degrees F and either spray a skillet or line a skillet with parchment paper.

Mix together all the dry ingredients and wet ingredients in separate bowls. Combine the two and fold in the chocolate chips.

Place the cookie mixture in the skillet & bake for 6 minutes.

Take out the skillet & add the pb-chocolate topping over entire cookie.

Bake for another 2 mins & top with ice-cream & enjoy.

I love sticking to dairy-free ice cream, but typically I find most ice cream to taste too much like coconut or almond. Part of the reasons I love Beckon is because they use real milk and cream to make the ice cream but it stays lactose-free. They use lactase enzymes to make sure the ice cream is 100% lactose-free and still deliciously creamy as normal ice cream.
They also have sea salt chocolate chip, which my personal favorite. Other flavors include mint chip, vanilla, chocolate, and their newest flavors — chocolate chip cookie dough and cookies and sweet cream.
For this cookie skillet, I used their espresso ice cream. But they have a variety of other flavors to choose from as well.
