If you’re into easy, but flavor-filled dinners, these cashew chicken lettuce wraps are the move. They are easy to make, you can add as many veggies as you would like, and you can make them to last you a few days during the work-week.

This recipe, like many of mine, started with a bunch of ingredients and no plan for them. But it turned into one of my current favorites, on repeat.

Ingredients needed to make these spicy cashew chicken lettuce wraps:

  • chicken
  • coconut aminos
  • ginger
  • arrow root flour
  • apples
  • cashews
  • bell peppers
  • rice
  • garlic
  • pepper
  • salt

Spicy Cashew Chicken Lettuce Wraps

Cook Time 25 minutes
Total Time 35 minutes
Servings 4 people

Ingredients

  • 1 lb chicken
  • 2 tbsp avocado oil
  • 1 tbsp minced garlic
  • 1/4 cup minced red onion
  • 1/4 cup coconut aminos
  • 1 red bell pepper
  • 1 cup chopped purple cabbage
  • 2 tsp ground ginger
  • 2 tsp coconut flour (to thicken)
  • salt to taste
  • pepper to taste
  • 1 cup cooked rice
  • 1 head butter lettuce

Instructions

  1. Cut chicken into tiny pieces.

  2. Cook your rice while you prep the rest of the items.

  3. Bring a large pan to medium heat. Once heated, add the avocado oil and chicken. Add-in the garlic and red onion, and cook until all three ingredeints are cooked.

  4. Add in coconut aminos, bell pepper, and cabbage.

  5. Mix together the ginger, water, coconut flour, salt, and pepper in a small bowl. Once consistent, pour into the heated pan and stir.

  6. Allow the mixture to simmer for 10 minutes. Add in the rice and stir.

  7. Serve cashew chicken rice mix in butter lettuce and enjoy!
