Raspberries are my JAM. [literally and figuratively], and these cashew butter raspberry jam cookies are no exception.
If you follow along with me on Instagram, then you know I am on a raspberry ROLL this week. This partially has to do with the fact that its summer, but also I found a huge box of frozen raspberries in my freezer from last summer.
Hashtag goldmine.
These cashew butter raspberry jam cookies are amazing, and taste like summer-time cookies should, fresh and fruity.
Cashew Butter Raspberry Jam Cookies
fresh and fruity – just the way summer cookies should be.
Ingredients
Cashew Cookies
- 1 cup almond flour
- 1/2 cup coconut flour
- 1 egg
- 1/4 cup cashew buter
- 2 tbsp maple syrup
- 1 tsp vanilla
- 1 tsp baking powder
Raspberry Jam Filling
- 1 1/2 cup raspberries
- 2 tbsp chia seeds
- 1 tbsp maple syrup
- 1 tbsp coconut oil
Instructions

Preheat the oven to 350.

Mix together all the cookie ingredients.

Place the dough in the fridge for 30 minutes.

While it is cooling, put all the raspberry ingredients on the stove to simmer.

Once the cookie dough is done cooling, place in balls on a tray, then lightly flatten them with a spoon.

Add raspberry filling on top, and cook for 12-ish minutes.

Over the past couple of years, I’ve found that fruit has gotten a bad rep in the wellness community.
“It will make you gain weight.”
“It will make you break out.”
Despite what the wellness community says at times, fruit is not bad for you! Raspberries are high in fiber, vitamins, minerals, and antioxidants, so you can’t go wrong!!
I’m lucky because I can pick these right at home.
My dad has a raspberry garden at home and every time I go out to pick I come back empty-handed because I eat them all, whoops! My pup also loves them and eats them off the bottom parts of the bushes so together, we make a great team.
They’re fresh, they’re fun, and they taste like summer. These cookies are already a smash in my household, and I bet they will be in yours too!
