Gluten-Free Blueberry Banana Bread
My go-to breakfast or afternoon snack
Ingredients
- 2 ripe bananas
- 2 cups almond flour
- 1 tsp baking powder
- 2 eggs
- 3 tbsp coconut oil
- 3 tbsp maple syrup
- 1 tsp vanilla
- 1 cup blueberries
Optional Topping
- 1 tbsp collagen peptides
- 1/2 cup gluten free oats
- 1 tbsp syrup
- 1 tbsp coconut oil
Instructions

Preheat oven to 350 and line a loaf pan with parchment paper (I recommend an 8.5 x 4.5 x 2.5)

Mix together the wet ingredients - bananas, eggs, coconut oil, maple syrup, and vanilla.

Add in the dry ingredients - almond flour and baking powder.

Fold in the blueberries.

Bake in the oven for 45-55 minutes. You will know it is ready when the ends are a beautiful, crispy brown.

Mix together the optional topping and place it on top of the cooked bread.
If you have been following along with me then you know I have quite the sweet tooth. I normally crave chocolate when I want something sweet but in the summer I frequently find myself wishing for a fruit-based dessert.
When I am looking for a fruit-based dessert I usually want something with blueberries.
I’m lucky because my grandparents have a giant blueberry farm in New Hampshire that I am lucky to visit throughout the summer. Whenever I go I pick for a few hours and stock up on a few gallons. I’ll even freeze them to use throughout the year, which honestly, saves me a decent amount of money!
Bluebs (as we call them) are my favorite fruit. They are high in antioxidants, have cancer-fighting properties, increase weight loss, increase brain health, increase heart health, aid in digestion, and decrease inflammation! Not to mention they are super yummy and make any recipe delicious.
Enter: my paleo gluten-free blueberry banana bread!
This recipe is not only so delicious but it is so easy to make. It takes less than 10 minutes to throw it together, and only requires 8 ingredients.
Not to mention it is amazingly tasty.
This bread is awesome because it can be eaten completely by itself or with other toppings.
My favorite way to eat this bread and most banana based breads is with yogurt! I like to add vanilla or plain yogurt on top of the bread with a little cinnamon and it tastes even better.
