Single-Serve Apple Pie

I love single-serve anything, but single-serve apple pie is definitely a fall favorite for me.

A few weeks ago I made single-serve apple crisps, and when Beckon Icecream reached out to me asking for a single-serve apple pie recipe to go with their fabulous vanilla ice-cream, I was pumped.

Anyone who keeps up with me on social media knows that apples are my favorite fall ingredient to bake with. Apple-oatmeal cookies, apple crunch bread, and oatmeal-apple bowls are my go-to during the fall.

I recently made a single-serve apple crisp recipe and thought, I should try this but in actual pie form. They took only one try to perfect because the recipe is so simple, and only a few tries to eat them all – ha.

All you need is some pie crusts (you can buy or make homemade, whichever works), apples, and a few ingredients from your spice cabinet.

Single-Serve Apple Pie

Your favorite apple pie made single-serve!

Prep Time 5 minutes
Cook Time 15 minutes

Ingredients

  • 2 pie crusts
  • 2 1/2 cups skinned and diced apples
  • 2 tsp almond flour
  • 1 tsp cinnamon
  • 1 tsp allspice
  • 1/4 tsp nutmeg
  • 1/2 cup coconut sugar
  • 1 tsp vanilla

Instructions

  1. Preheat the oven to 425.

  2. Peel the apples and dice them into small pieces.

  3. In a separate bowl combine the almond flour, cinnamon, allspice, coconut sugar, vanilla, and nutmeg.

  4. Add the mix to the bowl with the apples, and stir until the apples are consistently coated.

  5. Butter or spray a muffin tin, then cut out sections of the pie dough, and place in the muffin tin.

  6. Place a spoonful of the apple mixture in each tin.

  7. Bake for 25 minutes, or until the crust is browned.

  8. Top with Beckon Vanilla Icecream and enjoy!
