If I had to make a list of good things that came out of 2020 so far, this lemon cashew sauce would be at the top. If you follow along with me on Instagram, then it’s no secret that I live for vegan pasta dishes.
This is one of my go-to pasta recipes that I typically love in the winter, but recently have been loving it with a summery tweak. Instead of having it taste like the Panera mac & cheese, I added some lemon, a bunch of extra virgin olive oil (iykyk), and voila a summertime pasta.
Vegan Pasta With Lemon Cashew Sauce
Ingredients
- 1 box pasta of choice
- 1 cup water
- 1 cup cashews
- 1/2 lemon juice + zest
- 2-3 tbsp olive oil
- 2 tbsp ground black pepper
- 2 tsp garlic powder
- 2 tsp salt
Instructions

Pour 1 cup of cashews into a bowl, and soak in boiling water for 20 mins.

Cook your pasta according to how you like it! I use @eatbanza most of the time. Make sure to reserve two cups of pasta water when you strain.

While the pasta is cooking, grab your blender or processor and add lemon juice, lemon zest, olive oil, black pepper, garlic powder, and salt.

Drain your cashews and add those too.

Lastly, add the 2 cups of pasta water and blend on high for 1 minute.

Pour sauce over your pasta, and add pepper or salt for garnish, and enjoy!
This sauce goes great with spaghetti, or any pasta shape of choice. I prefer shells to any other type, so that’s what I usually go with.
Back to my gratitude list, let’s talk about it for a minute.
Every morning I try to write down a list of things that I am grateful for or things that I am looking forward to that day. This has helped me a ton with becoming more mindful, and more stress-free.
You know I’m all about hormone health and this technique has really helped my hormones stay balanced. I used to open my email first thing, which would send my cortisol shooting upwards. Never a good idea lol.
This practice also helps center my thoughts and minimize my worries when I realize how many things I have to be grateful for.
Today’s morning gratitude list:
〰️this pasta ft. lemon cashew sauce for dinner.
〰️ being able to drink coffee and it not hurting my stomach.
〰️being home with nick and having family dins with my family.
〰️all the puppy cuddles.
〰️the sunshine! My body is feeling good today which gets me excited to workout outside.
〰️a healthy mind, this is not something I ever take for granted.
〰️my new coffee glasses.
〰️organic light roast coffee.
〰️my job! I love what I do so much.
