Gluten-free apple oatmeal cookies are my favorite this time of year!
If you’re anything like me then you absolutely love all things fall. The colors, the weather, the clothing, but most of all – the flavors.
There is something comforting and slightly nostalgic about a good pumpkin bread, or an apple muffin. Growing up in New England only fueled my love for fall further, and now that I’m spending my third fall in a row away from the magnificent foliage, fresh apples, and cool weather, I’m starting to truly miss it.
One thing that I can still do is bake away my feelings. AKA it’s time to introduce you to my favorite baked goods – apple oatmeal cookies. Seriously, these are my favorite!
Healthy Apple Oatmeal Cookies
[gluten free, sugar-free goodies]
- 2 cups almond flour
- 2 tsp cinnamon
- 1/2 tsp nutmeg
- 1 tsp baking soda
- 1/2 tsp salt
- 1/2 cup butter [ghee also optional]
- 1/2 cup coconut oil
- 1/4 cup maple syrup
- 2 eggs
- 2 tsp vanilla extract
- 3 1/2 cups rolled oats
- 2 apples [cut and chopped into little pieces]
Preheat oven to 350 degrees.
Mix together the dry ingredients in one bowl (almond flour, cinnamon, cinnamon, nutmeg, baking soda, salt, coconut sugar)
Mix together wet ingredients in another bowl (ghee, coconut oil, syrup, eggs, vanilla) until mixture is smooth.
Add-in the dry ingredients to the wet ones.
Add-in the rolled oats, until consistent throughout the batter.
Lastly, fold in the apple pieces.
Roll into balls and place onto baking sheets. Bake for around 12 minutes on 350 degrees.
After removing, allow them to cool and then top them with optional yogurt mixture/nuts of choice.
Optional Yogurt Topping
Take ½ cup of yogurt -- I use plain [foragers brand] because it’s not made with dairy, but feel free to use whatever kind you prefer!
Add ½ tsp of nutmeg, 1 tsp of cinnamon, and 1 Tbsp of syrup to the yogurt.
Drizzle on-top of cookies.
I remember making these cookies for the first time last year, on a trip home. My family had gone apple picking, and there was a surplus of apples lying around the house, so I decided to whip something up. At the time I was craving oatmeal cookies so I decided to make my traditional ones with a few added spices. It turned out great and made for the perfect apple treat.
Not only are these super easy to make, but they are also relatively healthy! They have no added sugars nor do they have any gluten [yay gluten-free people].
