Is there anything better than chocolate coconut bites?

Well, maybe eating them on a beach, or by a lake, but they really are in my top favorite recipes. They’re incredibly easy to make, delicious, and have the perfect level of crunch.

If you are a fan of coconut, then this is the recipe for you.

Chocolate Coconut Bites

All you need to make these bites is a few ingredients and a freezer to keep them cool. Part of the reason I love these bites so much is because they take minutes to make and don’t require any baking.

Gluten-Free Chocolate Coconut Bites

Ingredients

  • 1 cup gluten-free oats
  • 1/2 cup shredded coconut
  • 1/4 cup cocoa powder
  • 1/2 cup mini dark chocolate chips
  • 1/2 cup peanut butter
  • 1 tsp vanilla extract

Topping

  • 1/2 cup chocolate chips
  • 1 tbsp coconut oil

Instructions

  1. Add together wet ingredients in one bowl, dry in another.

  2. Add the dry ingredients into the wet ones.

  3. Roll dough into balls and place in the freezer for an hour.

  4. While they are freezing, melt 1/2 cup of chocolate chips.

  5. Dip balls in the chocolate.

  6. Place back in freezer & enjoy whenever you like! 

This recipe is easy to throw together and you can keep it in the freezer to enjoy later. I like to keep them in the freezer at all times, so whenever I’m craving some chocolate I can just grab one.
