Gluten-Free Everything Cookies
These gluten-free everything cookies are everything to me!
I used to make them all the time in high school and just forgot about them somehow?? Instead of the normal sugar-packed cookies, I made in high school, these are made with only 1/3 cup of coconut sugar.
Aka no post-coffee stomach ache for me 🙂
For this recipe, I used toasted vanilla marshmallows from Smashmallow. They’re organic, GMO-free, and made with cane sugar. You can grab some on Amazon here.
Gluten-Free Everything Cookies
called everything cookies because they are EVERYTHING to me
Ingredients
- 1 1/4 cup almond flour
- 1/3 cup coconut sugar
- 1/2 tsp baking soda
- 1 egg
- 2 tbsp coconut oil
- 1 tsp vanilla extract
- 1/3 cup gluten-free pretzels
- 1/3 cup chocolate chips
- 1/3 cup marshmallows
Instructions

Preheat the oven to 350 degrees F.

Add 1 1/4 cups of almond flour + 1/4 cup of @gainful protein powder + 1/3 cup of coconut sugar + 1/2 tsp baking soda to one bowl.

Add 1 egg, 2 tbsp coconut oil, and 1 tsp vanilla extract to another bowl.

Add-in the dry ingredients to the wet.

Then fold in 1/3 cup of chocolate chips, 1/3 cup of marshmallows, and 1/3 cup crushed pretzels.

Place on a tray in the oven at 350 for 8-10 minutes. Enjoy!
If you’re feeling extra crazy, you can add in other ingredients too, like coconut flakes, or nuts of one kind or another.
These cookies are truly a crowd-pleaser. I used to bring them to everything in high-school, and I am planning to do the same with these ones. Except for this time they are not packed with as much sugar, and are gluten-free 🙂
