Gluten-Free Peanut Butter Banana Bread
This gluten-free peanut butter banana bread is the bread of my dreams.
As a kid, I never really liked PB&J.
Looking back, I think I was crazy because it’s such an unreal combination. Nowadays, I head towards a more nutritious version of the OG PB&J, with homemade bread and jam.
I won’t babble on, you’ll just have to try it out yourself 🙂 Recipe and details are below.
Gluten-Free Peanut Butter Banana Bread
Add some homemade jam and you’ve got an old school PB&J on steroids.
Ingredients
PB Bread
- 2 bananas
- 1/3 cup peanut butter
- 1 tsp vanilla
- 2 tbsp maple syrup
- 1 egg
- 2 cups almond flour
- 1 tbsp chia seeds
- 1 tsp baking soda
- 1 tsp baking powder
- 1 tsp cinnamon
Peanut Butter Frosting
- 1/2 cup peanut butter
- 8 oz greek yogurt
- 2 tbsp maple syrup
- 2 tbsp cream cheese
- 1 tsp vanilla
Instructions

Pre-heat oven to 350.

Add bananas, peanut butter, maple syrup, vanilla, and egg to a blender and blend.

Add almond flour, baking soda, chia seeds, baking powder, and cinnamon together in a bowl.

Add wet ingredients to dry.

Place mixture in a loaf pan, cook for ~ 45 minutes.

Wisk together all the ingredients for the peanut butter frosting, and let sit in the fridge for a few hours.

Enjoy the bread along, or add the peanut butter frosting or your favorite homemade jam!
When I’m done making the bread, I like to serve it warm with some peanut butter frosting, or blueberry jam, or both!
It’s a win-win situation really.
If you are looking to make some quick homemade jam here is my easy recipe: heat 2 cups of blueberries on medium until the fruit begins to bubble. Add-in 2 tbsp of chia seeds, and 1 tbsp of maple syrup.
Done! So easy, and so yummy.
