Gluten-Free Spicy Peanut Pad Thai

If there is one thing you need to add to your to-do list this week it’s this gluten-free spicy peanut pad thai. It’s quick, easy, and oh-so-savory.

On Sunday night, which is normally an eat cereal, prep for the week, and watch T.V. kind of night for me, I had this weird craving for pad thai.

Instead of my normal bowl of cereal, I decided to see how fast I could make a nice bowl of chicken pad thai. This quickly turned into gluten-free spicy peanut pad thai, and my new favorite recipe.

Gluten-Free Spicy Peanut Pad Thai

quick, easy, and almost too good to be true. 

Ingredients

Noddle Base

  • 8 oz rice noodles
  • 1 tbsp coconut oil
  • chopped chicken
  • sliced carrots
  • 1/2 red pepper
  • 1/2 head brocoli
  • 2 tbsp peanuts
  • 1 tbsp sesame seeds

Sauce

  • 3 tbsp bone, beef, or veggie broth
  • 2 tbso coconut aminos
  • 2 tbsp soy sauce (gluten-free)
  • 2 tbsp crunchy peanut butter
  • 1 tsp red pepper flakes

Instructions

  1. Cook the noodles per their instruction. 

  2. Cook chicken to your liking, while sautèing the veggies at the same time. 

  3. Mix broth, coconut aminos, soy sauce, crunchy peanut butter, and red pepper flakes all together in a bowl. 

  4. Add the sauce and veggies to the noodles. 

  5. Enjoy! 

There you have it – one of the easiest gluten-free spicy peanut pad thai’s on the market.
