Veggie Packed Breakfast Bowl

I’m already full and satisfied just thinking about it. 

Ingredients

  • 2 tbsp olive oil
  • 2 potatoes
  • 1 tomato
  • 2 cups cauliflower rice
  • handful spinach
  • handful kale
  • 4 eggs
  • 2 tsp garlic
  • diced onion

Instructions

  1. Add the olive oil, potatos, tomatoes, onion, and garlic to a pan. Cook over medium, until crispy. 

  2. Heat the cauliflower rice. When done cooking add to the potato mix.

  3. Heat the kale and spinach on the stovetop over medium. When done cooking, add to potato mix. 

  4. Cook eggs separately, to top off the above mix with! 

  5. enjoy! 

This veggie packed breakfast bowl is the best way to jump start any day!

Is it hard for you to get in your vegetable servings each day? As someone who struggles to get in her vegetable count, adding them to every single meal is one of the easiest tricks.

Another trick? Adding them all together and making a fun bowl of it.

For this recipe, I always throw in random ingredients. Basically whatever I have left in my refrigerator for veggies, is what I throw into this bowl!

Super easy recipe and is bound to be a crowd pleaser.
