No Bake Chocolate Coated Cookie Dough Bites
These cookie dough bites are my new favorite snack. If you’re anything like me, you have a crazy sweet tooth at random moments.
Keeping these chocolate-coated bites in my freezer is a lifesaver. I tend to only eat a half at a time because they’re surprisingly savory, satisfying any craving with just a bite or two!
These were inspired after I found myself craving cookie dough, but knowing eating raw eggs wasn’t exactly a brilliant idea.
No Bake Chocolate Coated Cookie Dough Bites
Too good to be true. Except here they are.
Ingredients
- 1/3 cup cashew butter (or nut butter of choice)
- 3 tbsp coconut oil
- 3-4 tbsp maple syrup (depending on how sweet you prefer)
- 1 tsp vanilla
- 1 cup almond flour
- 1 cup coconut flour
- 1 tsp baking soda
- 2 tbsp almond milk
- 1/2 cup mini chocolate chips
Chocolate Topping
- 1 1/2 cup chocolate chips
- 2 tbsp coconut oil
Instructions

Add together wet ingredients in one bowl, dry in another.

Whisk the wet ingredients for 1 minute. ⠀⠀

Add the dry ingredients into the wet ones.

Fold in mini chocolate chips.

Roll dough into balls and place in the freezer for an hour.

After they freeze, melt 1 1/2 cup of chocolate chips and 2 tbsp of coconut oil over stove.

Dip the cookie dough balls in chocolate.

Place back in freezer & enjoy whenever you like! ⠀⠀
But to be real for a moment: did anyone else eat copious amounts of cookie dough as a kid and never get sick?!
Yep me either.
That said — I decided to make some edible — egg-free — cookie dough bites.
These, like every great recipe, were supposed to be regular cookies when I realized I didn’t feel like doing the same old same old. Thus, these (UNREAL) cookie dough bites were born.
If you have noticed a common theme, most of my recipes come from a mistake in the kitchen. With these, I thought I was making a mock perfect bar but ended up liking the consistency for cookie bites.
