Have you tried these pumpkin spice muffins yet?

Okay, first I need to admit something. I’m not actually a huge fan of pumpkin. Every year I try to make a few pumpkin-themed recipes solely because most everyone else loves the flavor! I’m not sure why, but I’d choose something apple-themed any day over pumpkin in the fall.

Just my opinion, but if you do happen to love pumpkin, then this recipe is a great one for you to try out. It includes minimal ingredients, is easy to make, and is a real crowd pleaser. As always, please reach out if you have any questions or comments about the recipe!

Ingredients needed to make these pumpkin spice muffins:

  • almond flour
  • baking soda
  • cinnamon/ground nutmeg/pumpkin pie spice
  • eggs
  • pumpkin purée
  • maple syrup
  • vanilla extract
  • cream cheese
  • softened butter
  • vanilla protein powder

If you’re looking for a dessert or just some muffins to snack on, this one is for you. It’s a great alternative to the traditional high-sugar pumpkin spice muffins and still tastes awesome. I’ll share some more pumpkin dessert recipes below in case you have a sweet tooth.

I typically make these every Thanksgiving and they’re always a hit! 🙂

Pumpkin Spice Muffins

pumpkin spice + everything nice.

Ingredients

  • 3/4 cup almond flour
  • 1/2 tsp baking soda
  • 1 1/2 tsp cinnamon
  • 1/4 tsp ground nutmeg
  • 1 tsp pumpkin pie spice
  • 2 eggs
  • 1/4 cup organic pumpkin purée
  • 2 tbsp maple syrup
  • 1/2 tsp vanilla extract

Frosting (optional)

  • 8 ounces sofrened cream cheese
  • 2 tbsp softened butter
  • 1 tbsp maple syrup
  • 1 1/2 cup vanilla protein

Instructions

  1. Mix all ingredients together & pour into cup cake tins. Make sure to either spray the tins or line them with cupcake tins.

  2. Bake pumpkin spice mufffins at 350 for 22 mins.

  3. While baking, whip together the frosting. Add all ingredients to a bowl and use a mixer until whipped.

  4. This recipe makes 5 muffins, feel free to double or triple. 🙂 Enjoy!
