Vegan Cashew Cheese Pesto
a quick and easy vegan take on pesto cashew cheese <3
- 1 cup raw cashews
- 2/3 cup fresh basil leaves
- 4 small cloves of garlic
- 1 tbsp lemon juice
- 1/2 tsp garlic powder
- 3/4 tsp salt
- 3/4 tsp black pepper
- 1/2 cup water
Place all ingredients in a food processor and blend!
Blend until the ingredients are relatively smooth, adding more or less water for desired texture.
Add in optional fresh herbs and ENJOY.
This is one of my year-round staples!
It’s ohhhh-so easy to make and a crowd pleaser at that.
My favorite way to eat this topping is on pasta. I usually use the chick-pea made brand Banza which is my favorite pasta. I feel less guilty eating it but still enjoy the many comforts of carbs that come with it.
You can put it on top of pasta, crackers, or even use it as a sandwich topping – it’s honestly one of the best things I’ve ever made.
