One of my favorite summer desserts is these blueberry lemon cheesecake bars. ⚡️ Blueberry lemon has got to be one of my favorite summer flavor combinations. Maybe thats why these cheesecake bars are my go-to come summer.

One of the quotes I’m living for this summer goes: “Everything you want is out there waiting for you to ask. Everything you want also wants you. But you have to take action to get it.”

It might sound silly, but I believe this is fundamental to your health as much as it is to your career, relationships, etc. ✨🌿

For a long time, I didn’t think that I could get better. I mean the doctors said exactly that. Learning how to heal my body through things like nutrition, supplementation, movement, and mindfulness gave me a life again.🍵🍄

It took years but it helped me remember how important it is to go after what you want. It also helped teach me how valuable good health is — and it has left me with an immense amount of gratitude for the small things every single day.

While it might sound silly, being able to make these bars without my hands hurting, or without becoming physically exhausted after standing for a few minutes is such a blessing these days!

Blueberry Lemon Cheesecake Bars

my summer go-to!

Ingredients

Crust

  • 1 cup nutsola vanilla mix
  • 2 tbsp melted coconut oil

Cheesecake Filling

  • 2 cup raw cashews soaked in warm water
  • 1/4 cup coconut milk
  • 1/4 cup maple syrup
  • 2 tbsp lemon juice
  • 1/2 zest from a lemon
  • 1 tsp vanilla extract

Topping

  • 1 cup blueberries
  • 1 tbsp coconut oil

Instructions

  1. Mix together the crust (@nutsolaofficial + coconut oil) and grease a pan with coconut oil. Push the crust mixture to the bottom of the pan oil hard.

  2. Add the raw cashews, coconut milk, maple syrup, lemon juice, lemon zest, and vanilla to a blender for about 1-2 minutes.

  3. Pour the mixture over the crust.
4. Place the topping blueberries, lemon juice, and coconut oil in the microwave for 30 secs then pour over the cheesecake mixture.

  4. lace pan in the freezer for 2-3 hours or until hard and then serve!
