I could eat gluten-free pancakes every day.
A reminder if you need one: it’s great to do sweat-inducing home HIIT workouts every day — but it’s also okay to take a break. It’s awesome if you’re able to create nutrient-dense meals every day, but it’s also okay to eat what you can.
I keep finding myself subconsciously thinking that I’m not doing enough. I’m not working out enough, I’m not eating enough vegetables, I’m not meditating enough.
And I find myself becoming stressed with the idea of who I should be.
If you need this reminder, as I gave to myself this morning, then take it to heart. We are living through an international pandemic.
The world and our society is pretty upside down right now. We aren’t in quarantine to get jacked or to lose weight. We are in quarantine to stay healthy. Yes, eat your veggies, yes, move your body, but take away the necessary pressure that social media often facilitates, and do what makes you feel good and what fuels you.
Some days that might look like a nutrient-dense smoothie and a HIIT workout, other days it might look like a slow walk and a stack of pancakes.
Don’t be hard on yourself and let yourself live.
Gluten-Free Pancakes
easy, yummy, and delicious
Ingredients
- 1 cup almond milk
- 1 1/2 tsp baking powder
- 3 eggs
- 2 tbsp coconut oil
- 1 tbsp maple syrup
- 3 tbsp almond milk
Instructions

Add the flour and baking soda to one bowl.

Wisk together the eggs, coconut oil, maple syrup, and almond milk.

Add the dry ingredients to the wet.

Pour the batter onto a greased pan and let cook on medium heat until the side facing up is bubbling.

Serve with fruit, nut butter, syrup, whatever your heart desires, and enjoy!
