Chocolate Chip Peanut Butter Stuffed Cookies

These chocolate chip peanut butter stuffed cookies are my new favorite for sure. The other night, Saturday night to be specific, I was at my boyfriend’s and in need of something sweet.

What started as an innocent batch of my peanut butter chocolate chip cookies, quickly turned into a crazy new batch of cookies: chocolate chip peanut butter stuffed ones.

The second you break these cookies in half, the peanut butter will start to drip, and the chocolate will follow suit. I’m getting hungry just thinking about them right now – ha!

Chocolate Chip Peanut Butter Stuffed Cookies

Ingredients

  • 1/2 cup almond flour
  • 3/4 cup oats
  • 1 tsp baking soda
  • 1 cup chunky peanut butter
  • 2 tbsp maple syrup
  • 1 tbsp honey
  • 1 egg
  • 3/4 cup chocolate chips or chunks

Filling

  • peanut butter (ranges in amount)
  • 1/3 cup chocolate chips
  • 1 tbsp melted coconut oil

Instructions

  1. Preheat the oven to 350.

  2. Add the almond flour, oats, and baking soda in one bowl.

  3. Combine the peanut butter, honey, maple syrup, and egg in another bowl.

  4. Add the dry mix to the wet mix. Then add in the chocolate chips.

  5. Place batter in balls on a baking tray,  and press thumb down in the middle of ball so there is a divet. Then place in the oven for 5 mins.

Filling

  1. After 5 mins, place peanut butter (I did 1 tsp) in the center of each cookie, and cover top in melted chocolate and coconut oil. 

  2. Cook for another 5-6 minutes.

  3. Enjoy!
